Jalapeno Cheddar Cornbread
I love bread.
I love cornbread.
Yesterday I made Jalapeno Cheddar Cornbread and IT.WAS.AWESOME.
For the record, anything bread is my weakness so if you're not a bread lover like me this might not tickle your fancy.
I started with all of the ingredients to the left, which included a key staple in any pantry; Jiffy Cornbread Mix!
Essentially, you follow the exact directions on the box:
The contents of 1 package of Jiffy cornbread mix
1 large egg
2/3 cup of milk (this amount was increased, see reason below)
This is where the ingredients differ:
1/3 cup of finely shredded cheddar cheese
1/2 cup of freshly cut jalapenos (try to eliminate as many of the seeds as possible, unless you like it HOT!)
*The box calls for 1/3 cup of milk, I increased this amount because adding cheese thickened the batter. Increasing the milk helped me loosen the batter up some.
Mix all ingredients up well, if the batter is too thick add more milk and mix again.
MAJOR KEY ALERT!
Cornbread is made best with BUTTER and a CAST IRON SKILLET. The biggest thing to remember about both is this:
Once your oven is pre-heated (400), melt a tablespoon of butter in the skillet until you hear it sizzling.
Take out the skillet, pour in the cornbread mix and return it to the oven for 15-20 minutes (or until the sides come away from the skillet). This is when you know your cornbread is about to be LIT!

Here are some final pointers to remember:
Cut a piece of the cornbread shortly after taking it out of the oven. This allows it to cool without becoming soggy at the bottom. I learned this trick from my grandmother (Thanks Mimi!)
A well seasoned cast iron skillet will not cause the cornbread to stick. For more info on seasoning a cast iron skillet click here.
Try your hardest not to eat half of the cornbread before your meal is ready. That may or may not have happened to me *Kanye shrug*
