Homestyle Breakfast Casserole

Looking for an easy, filling breakfast casserole? Look no further!

Ingredients:

  • 4 strips maple bacon

  • 1/2 small roll refrigerated breakfast sausage

  • 1/2 yellow onion (diced)

  • 2-3 small sweet peppers or 1 medium bell pepper (diced)

  • Garlic Powder

  • 7 large eggs

  • 1/2 cup of milk (or your favorite milk substitute)

  • 2-3 cups of frozen potatoes

  • 1/2 shredded cheese (increase if you want more cheese)

  • Paprika

  • Cajun seasoning (Tony’s, Slap Ya Mama, Zatarains, etc.)

Steps:

  1. Pre-heat oven to 350 and prepare square/rectangular oven safe baking dish.

  2. Cook breakfast sausage in large skillet and cook bacon (I microwaved my bacon because the oven was pre-heating, you could also use shrimp.) Place cooked meat in a new bowl, separate sausage and bacon to avoid overly greasy sausage.

  3. Saute diced onions and peppers, add a few pinches of garlic powder to this mixture and stir occasionally until onions are translucent. Move chopped veggies into the same bowl as cooked sausage.

  4. Place a dash of olive oil or butter, OR bacon grease into skillet and heat frozen potatoes. I like a crispy potato, so I cooked mine much longer than recommended. Add paprika, cajun seasoning, and more garlic powder, stir until evenly coated on potatoes and let them cook/heat.

  5. While potatoes are going, beat eggs and milk together and combine with sausage and veggie mixture.

  6. Spray non-stick spray into glass dish. Pour egg, veggie, sausage and potatoes to glass dish and stir around to incorporate all items evenly

  7. Place in oven for 20 minutes, or until eggs are set. Be sure to check occasionally, oven times vary based on oven temp and type. Glass dish will allow you to see if eggs have properly set up.

  8. Crunch bacon and place on top of mixture during the final 5 minutes of cooking.

    Added EXTRA (but very worthwhile) step:

  9. Turn oven to broil and VERY CAREFULLY allow top of casserole to brown, add shredded cheese and return to broiler again until everything is golden and no runny egg is visible.

  10. Allow to cool, cut, and ENJOY!
